We offer a mix of local flavours and Trentino tradition.
Many of the products used are "homemade" or km0.
However, all carefully selected and of high quality.
We offer culinary itineraries of the Trentino tradition:
Starting with the strong taste of our cutting boards: speck, local salami, smoked bacon, lard, or mountain cheeses; all accompanied by mustards and homemade bread made in the Refuge.
You can move on to our unmissable Trentino canederli with butter and sage or with goulash or, for those who want to warm up a bit, even in broth.
There is also the possibility of enjoying a good plate of pasta or hot soup.
Also unmissable is the traditional polenta accompanied by: grilled cheese, goulash, rabbit, lucanica, mushrooms and sauerkraut.
Polenta is made with Storo flour, cooked on a wood stove, in the classic copper pot.
For those who want, there is also the alternative of eating our Piatto Unico dell'altissimo which is composed of: polenta, goulash, canederli with melted butter and sage, accompanied with samples of mixed mountain cheeses.
Finally, there is the possibility to try our cakes,
made with care and patience by our chef: from the beloved buckwheat with a filling of berry jam, to the traditional torta de fregoloti, to the tarts.
At the end of the meal you can taste our many flavoured grappas!
